Farmers Market Fresh: Fava Beans and Artichokes

Bright green, spring fresh produce!

The rain cleared out just in time for vendors to get out and not get soggy! It's a wonderfully crisp afternoon to get some bright green, healthy veggies for dinner.

The fava beans and artichokes caught my eye. I hadn't seen the fava at this market before, the bean, that looks like a large soy bean pod, must be in season. They are going for $3 a pound.

The fava beans have to be taken out of their pod and then each bean must be removed from their own skin, or the diner can do so. I usually just saute them in olive oil, garlic, salt and pepper, but Seasonal Chef.com has nine different recipes for the bean.

The tight leafed artichoke (a sign of a fresh 'choke) abound at the market today. Grab one for an easy appetizer tonight. Pop it in a bowl, cover it with plastic wrap and microwave it for a few minutes and serve with melted butter. Easy.
