Santee Lakes Fishing Report: Early Morning Bass, Saucy Catfish Recipe

WEEK OF: May 27, 2013  

BASS:

The Bass are on the chew! Throw topwater in the early AM hours on lakes 1, 2 or 5. Senko’s and nightcrawlers are also working well.  

BLUEGILL:
 
Hand size Bluegill are coming out of lakes 5, 6 and 7. Reminder Lakes 6 and 7 are reserved for campers only. Check out Santeelakes.com for campsite availability.  

CATFISH:
Lakes 3 and 4 split a 1,000 lb. stock of the whisker fish this past Friday.    Jerry Lynn and his grandsons caught 5 Catfish out of lake 4. See photo.

Come fish lakes 1 thru 4 from 5: 00 pm till 11:30 pm. Bring a lantern. Radios are not permitted.  

Recipe of the Week:
 Saucy Catfish  

Ingredients
  • 1 1/2 pounds (4 fillets) catfish
  • 2 teaspoons salt
  • 1/2 cup ketchup
  • 1/2 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup brown sugar
  • 2 teaspoons apple cider vinegar
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup chopped sweet onion
  • 1 lemon, sliced
Directions Preheat the oven to 300 degrees F. Line a 9 by 13 by 2-inch casserole dish with aluminum foil. Sprinkle the catfish with salt and arrange the fillets in the casserole dish. Make the basting sauce by mixing the ketchup, mayonnaise, mustard, Worcestershire sauce, brown sugar, vinegar, butter, and onion. Pour the sauce over the catfish and bake until the fish flakes easily with a fork, about 20 to 25 minutes. Baste the fish, with the sauce in the pan, every 10 minutes as it bakes. Remove the fish from the oven and using pancake turners, carefully transfer the fish to a serving platter. Garnish with lemon slices and serve.
